Making syrniki with a filling is an exciting process that requires a little skill, but the result is well worth it! I particularly enjoy adding fresh berries, which give the syrniki incredible tenderness and sweetness, allowing for minimal sugar use. The main advantage of this dish is that you can experiment with any additions to your liking: sour cream, honey, or fresh berries will be the perfect complement to these airy syrniki.

Gather all the necessary ingredients. For convenience, dust a clean countertop with flour. Thoroughly rinse the fresh raspberries.
In a deep bowl, combine the cottage cheese, egg, sugar, and salt. Add the flour and mix thoroughly until a uniform dough is formed. On a floured surface, roll the dough into a sausage shape and divide it into 8 equal parts.
Form a small patty from each piece of dough. Place a few raspberries in the center of each patty, adding a little sugar or honey to taste. Carefully bring the edges of the dough together around the berries so that the filling is completely enclosed, and gently flatten the cheesecakes.
Heat the vegetable oil in a frying pan. Fry the syrniki for 3–4 minutes on each side until a tempting golden-brown crust forms.
Serve the hot syrniki with sour cream, your favorite jam, honey, or fresh berries. For an attractive presentation, you can lightly drizzle the plate with jam.
