Typically, flour or semolina is added to syrniki (cottage cheese pancakes) to help them hold their shape better and be fluffier. In this recipe, we've omitted both flour and semolina, simply coating the syrniki lightly in breadcrumbs to give them a golden color when baked. Following this recipe, the syrniki turn out a bit denser than usual and slightly less sweet, yet they remain incredibly delicious and healthy.

Prepare all ingredients: wash the eggs and measure out the required amount of each product.
Preheat the oven to 180 degrees Celsius. In a deep bowl, thoroughly mix the cottage cheese, eggs, salt, and sugar until smooth. Form the cottage cheese mixture into neat, small, puck-shaped syrniki and evenly coat them on all sides with breadcrumbs.
Place the prepared syrniki on a baking sheet lined with parchment paper, or in a baking dish. Put them into the preheated oven and bake for about 30 minutes, until the syrniki turn an appetizing golden color.
Serve the prepared syrniki hot, optionally drizzled with condensed milk or honey for extra sweetness and flavor.
