To prepare pancakes with a sweet cottage cheese filling, gather all the necessary ingredients: flour, milk, eggs, sugar, salt, baking powder, cottage cheese, ground cinnamon, as well as vegetable and butter.
Heat a pancake griddle over medium heat and lightly grease it with vegetable oil. Before baking the pancakes, stir the batter again with a ladle. It should be thin enough to spread easily across the pan. If the batter is too thick, thin it with a small amount of hot milk or water.
Pour a ladleful of batter onto a well-heated pan and fry the pancakes on both sides until golden brown, flipping once. Immediately butter the finished pancakes with a piece of butter and stack them. Let them cool slightly.
Place about one tablespoon of the sweet cottage cheese filling on each cooled pancake. Carefully fold in the edges of the pancake and fold it into a square. Repeat this process with all remaining pancakes.
Heat a small amount of butter in a frying pan. Place a portion of the pancakes with sweet cottage cheese filling and fry, flipping, for 3 minutes on each side until golden brown. Finally, cover the pancakes with a lid and cook for another 2 minutes to ensure the filling is thoroughly heated. Serve these delicious pancakes hot, with sour cream and jam.
