In a spacious bowl, combine the eggs, sugar, and vanilla sugar. Beat with a mixer until a fluffy, airy mixture is formed. This process will take about 5 minutes, especially if the eggs are at room temperature.
To the beaten eggs with sugar, add kefir of any fat content and refined, odorless vegetable oil. Gently mix with a silicone spatula or a mixer on low speed.
In a separate bowl, sift together the flour, high-quality cocoa powder, salt, baking soda, and baking powder. Thoroughly whisk all the dry ingredients to ensure even distribution.
Combine the dry ingredients with the wet. Mix with a mixer on the lowest speed or with a spatula, using an upward folding motion to maintain the airiness of the dough.
Bring water to a boil, measure out the required amount, and quickly pour it into the dough, then mix again. Transfer the prepared dough into a 20 cm diameter cake pan. Bake in a preheated oven at 170 ºC for 40–50 minutes, until done (check with a dry skewer).
For the glaze: In a small saucepan, combine the butter and milk. Heat over medium heat until the butter is completely melted and the ingredients are combined. Pour the hot mixture over the chocolate pieces. Whisk until a smooth, glossy emulsion is formed. Cover the cooled cake with the prepared glaze.
