Begin by preparing the vegetables: carefully remove the outer leaves from the cabbage, then thoroughly wash and dry the head. Peel the carrots and onions so they are ready for further processing.
Grate the carrots coarsely, and finely shred the onion and cabbage. Slice the sausages into neat rounds. Sauté the onion and carrots in a pan until tender, then add the sliced sausages and cook for 7 minutes. Finally, season with salt and pepper, add the tomato paste, and mix thoroughly to combine all ingredients.
Add the shredded cabbage to the pan with the other ingredients and sauté for 5 minutes. Then, pour in a little water, cover the pan, and simmer over medium heat for about 30 minutes, stirring occasionally to ensure the cabbage cooks evenly and absorbs all the flavors.
Once the solyanka is ready, transfer it to a plate. Serve this appetizing dish with a slice of fragrant rye bread. To add freshness and brightness to the flavor, garnish the solyanka with fresh herbs to your liking.
