Sour cream 20% (medium fat) - 150 g
Water - 100 ml
Onions 2 pcs. - 80 g
Carrot 1 pc. - 70 g
Herbes de Provence seasoning - 1 tsp.
Corn starch - ½ tsp.
Refined vegetable oil - 2 tbsp.
Salt - to taste
Ground black pepper - to taste

Begin by preparing the chicken liver. Rinse it thoroughly, removing any fatty deposits and ducts. Then, cut the liver into small, neat pieces. Place the sliced liver on paper towels to ensure it dries properly.
Prepare the vegetables. Peel the onion and dice it finely. Peel the carrots and grate them on a large grater, or use a Korean-style carrot grater for a more interesting texture. Heat vegetable oil in a large skillet – this is where we will cook the entire gravy.
Add the prepared carrots and onions to the preheated pan. Sauté the vegetables over low heat for 5 minutes, making sure they don't burn. Then, add the chicken liver pieces and continue to fry everything together for another 7 minutes, until lightly golden brown.
Sprinkle the liver and vegetables with fragrant dried Provencal herbs, salt, and freshly ground black pepper. Mix thoroughly. In a separate bowl, dissolve cornstarch in a small amount of drinking water, then combine it with sour cream. Pour the resulting sour cream sauce into the pan with the liver.
Bring the gravy to a boil over high heat. Be sure to taste it and add a little more salt if needed. Reduce the heat to low and simmer the gravy for 5 minutes until it thickens and all the flavors meld together harmoniously.
Your delicious chicken liver gravy is ready! The liver pieces should remain tender and juicy, and the sauce should achieve a perfect, moderately thick consistency. This gravy is especially tasty with boiled rice or pearl barley, creating a hearty and flavorful dish.
