An hour before you plan to serve the pizza, preheat your oven to its maximum temperature (250°C). Then, take fresh herbs, aromatic garlic, and bright lemon zest, and blend them in a food processor until they form a smooth purée, gradually adding olive oil. Season this fragrant mixture with salt and pepper to taste, creating the perfect base for your pizza.
Roll out the pizza dough on a lightly floured surface to prevent sticking. Carefully transfer the rolled-out dough to a baking sheet, which you should first grease and sprinkle with cornmeal for a crispy crust. Then, evenly spread the prepared herb paste over the dough, leaving a small 1 cm border around the edges.
Grate the Parmesan and Provolone cheeses finely, and dice the mozzarella into neat, small cubes. Gently crumble the blue cheese with a fork. Combine all the cheeses in one bowl and mix thoroughly. Evenly spread this cheese mixture over the pizza dough, covering it completely. Generously sprinkle with walnuts and pine nuts. Place the pizza in the center of the preheated oven and bake for 15–20 minutes until golden brown and the cheese is melted.
