Prepare all the necessary ingredients. Pass the cottage cheese through a sieve for a smoother consistency. Thoroughly wash the eggs and dry them with paper towels. Get a whisk and a frying pan ready.
In a small bowl, combine the sugar and eggs and mix thoroughly. Add the sieved cottage cheese to this mixture and whisk vigorously until smooth. Then, stir in the baking soda, 4 tablespoons of flour, and vanilla. Mix the dough again until it reaches a smooth consistency.
Heat a frying pan over medium heat, adding a little vegetable oil. Pour the remaining flour into a separate bowl. Form neat cheesecakes from the cottage cheese dough and roll them in flour on all sides. Place the prepared cheesecakes on the heated pan and fry for 3-4 minutes on each side until golden brown.
Before serving, sprinkle the finished syrniki with powdered sugar and drizzle with your favorite jam for extra sweetness and flavor.
