Thoroughly wash and pat dry the chicken fillet. Wash the fresh tomatoes and herbs. Prepare the baking dish so everything is at hand.
Carefully make lengthwise cuts in the chicken fillet, opening it up like a book. Season the meat with salt, black pepper, and paprika. In a separate bowl, mix sour cream with mayonnaise and add a little pepper. Spread this mixture over the chicken fillet and let it marinate for 20 minutes so the meat absorbs the flavors.
Preheat the oven to 180°C. Slice the tomatoes into thin half-moon shapes. Place fresh herbs and tomato slices on each opened chicken fillet. Carefully roll the chicken breasts into tight roulades and secure them with toothpicks to prevent the filling from falling out.
