First, boil the eggs in salted water until cooked through, then cool them and carefully peel off the shells. Thoroughly wash the fresh herbs and dry them with paper towels. Prepare a frying pan and a grater so that everything is at hand.
Grate the boiled eggs and hard cheese using a medium or fine grater. Transfer the grated ingredients into a small bowl. Finely chop the green onions and parsley, then add them to the cheese and eggs. Dress the resulting filling with sour cream and mayonnaise, season with spices to taste, and mix thoroughly until smooth.
Cut the lavash into small rectangles. Place a small amount of the prepared filling in the center of each rectangle. Carefully fold the lavash into an envelope shape. Heat a frying pan over a flame and pour in vegetable oil. Place the prepared lavash envelopes in the pan and fry them for 5 minutes on each side until golden brown.
Serve the aromatic lavash with cheese filling immediately after preparation, while it is still warm and the cheese is melted. If desired, complement this delicious snack with a light vegetable salad for a more balanced meal.
