Begin your culinary magic by preparing the vegetables: finely chop the onion and garlic, core the bell pepper and dice it into small cubes, and julienne the carrot into thin strips. Melt the butter in a skillet, add all the prepared vegetables, and sauté them over high heat, stirring constantly to prevent burning, for 5 minutes. Then, transfer the aromatic vegetables to a Dutch oven or a thick-bottomed pot.
In a deep bowl, create a magical blend by combining the sifted flour with 1 teaspoon of salt and 1 teaspoon of freshly ground black pepper. Dredge each piece of chicken in this aromatic mixture. In a large, heavy-bottomed skillet, heat the vegetable oil, then arrange the chicken pieces in a single layer, shaking off any excess flour beforehand. Fry over high heat until golden brown, about 5 minutes per side. Place the cooked, browned pieces on paper towels to absorb excess grease.
Return to the Dutch oven with the vegetables: add the tomatoes along with their juice, pour in the chicken broth, and season with curry to taste. Bring the mixture to a boil, then reduce the heat to medium. Carefully add the browned chicken pieces, raisins, and shredded coconut. Cook until the chicken is incredibly soft and tender, which will take approximately 35–40 minutes. Finally, season with salt and pepper to taste to perfect the flavor.
For an impressive presentation, remove the stems from the parsley. Spread the leaves on a board, then sprinkle almonds over them. Chop everything together as finely as possible to create an aromatic and crunchy mixture. When serving, generously sprinkle this mixture over hot chicken, adding a refined touch and a unique aroma.
