Start by preparing the ingredients: peel and finely chop the onion. Thoroughly wash the chili pepper, cut it in half, remove the seeds, then rinse again and slice into thin half-rings. Grind the almonds into fine crumbs. Heat vegetable oil in a pan, add the chopped onion, and sauté for 1 minute until lightly golden. Then add the ground beef, mix thoroughly, breaking up any clumps with a fork. Cook, stirring constantly, over high heat for about 3 minutes until the meat is browned.

Add the prepared chili pepper and chopped almonds to the browned ground meat. Reduce the heat to medium and continue cooking, stirring constantly, for another 2 minutes. Keep in mind that the spiciness of the dish will depend on the amount of pepper: if you use a third of a medium-sized pod (about 3 cm), the tortillas will be moderately spicy, adding a pleasant piquancy.

Wash and dry the tomatoes, then slice them into rounds about 1 cm thick. Fry the tomato slices in a little vegetable oil for 30 seconds on each side until slightly softened. Optionally, the tomatoes can also be grilled for a special smoky flavor. Place one slice of fried tomato and 2-3 tablespoons of the flavorful meat filling onto each tortilla. Carefully roll the tortillas into tubes and serve immediately, savoring this vibrant and rich taste!
