Prepare an incredibly delicious pasta that will amaze you with its rich taste and aroma! Cook the pasta al dente, then combine it with tender shrimp and juicy vegetables, all swimming in a creamy tomato sauce. For a touch of piquancy, sauté garlic in vegetable oil to release its pungent aroma, then add diced vegetables. Remember that shrimp cook very quickly, no more than 5 minutes, to keep them tender and succulent. Add them at the very end along with the pasta, and let the dish simmer briefly under a lid so all the flavors can meld perfectly.

Boiled-frozen shrimp - 350 g
Tom yum paste - 350 g
Garlic - 3 clove
Vegetable oil 2 tbsp. l. - 2 tbsp.
Eggplant - 1 pcs.
Sweet pepper - 1 pcs.
Tomato - 2 pcs.
tomato paste - 2 tbsp.
Parsley - 1 bunch
Spices - 1 tsp.

Prepare all ingredients: thoroughly wash the vegetables, peel the garlic, remove the stem and seeds from the bell pepper, and rinse and dry the parsley.
Bring water to a boil in a pot, add salt, and then the pasta. Cook until al dente, then drain in a colander to remove excess water.
Slice the garlic thinly and sauté it in a preheated pan with vegetable oil for 3 minutes. Then, dice the bell pepper and eggplant and add them to the garlic. Sauté, stirring occasionally, for 6 minutes over medium heat.
Dice the tomatoes and add them to the vegetables in the pan. Stir in the tomato paste, mix well, and sauté for another 5–6 minutes.
Pour in the cream, then reduce the heat to low. Stirring constantly, cook the sauce until it thickens, which should take about 5 minutes.
Add the shrimp and cooked pasta to the pan. Mix thoroughly to ensure all ingredients are evenly coated with the sauce. Cover and simmer over low heat for 5 minutes.
Finely chop the herbs and add them to the shrimp pasta. Season with salt and spices to taste. Stir, turn off the heat, and let the dish rest, covered, for another 5 minutes.
Serve the fragrant pasta with vegetables and shrimp, generously sprinkled with grated Parmesan cheese.
