Prepare the pork: thaw if necessary, then rinse thoroughly and pat dry. Peel the potatoes and onions.
Cut the pork into medium-sized pieces. Place the meat in a pot, cover with water, and bring to a boil over medium heat. Once boiling, carefully skim off any foam that forms. Reduce the heat, cover the pot, and simmer the meat for 40 minutes.
Finely chop the onion. Cut the potatoes into small sticks.
Season the broth in the pot with salt. Increase the heat to medium and add the chopped potatoes. Boil for 5 minutes.
Add the chopped onion and continue cooking for another 5 minutes. Then, add the bay leaf to the stew and cook for the final 10 minutes.
Ladle the fragrant soup into bowls. If desired, add a knob of butter to each serving and sprinkle with fresh chopped herbs for a burst of flavor and aroma.
