Prepare this wonderful borscht base, which will significantly simplify the process of making your favorite soup during the cold season. Beets, carrots, onions, and tomatoes, stewed with aromatic spices, will become the perfect foundation for a rich and delicious borscht. This preparation will not only save you time but also fill your home with the summery aromas of vegetables.

Sugar - 100 g
Lemon acid - 0.3 tsp.
Table vinegar (9%) - 150 ml
Vegetable oil 2 tbsp. l. - 170 ml
Greens (parsley, cilantro, basil, dill - to taste

To begin, ensure your jars and lids are perfectly clean and sterilized. This is crucial for the long-term preservation of your borscht base.
Carefully prepare all the vegetables. Wash and peel the beets, carrots, and onions. Gently peel the tomatoes to ensure a tender preserve.
Grate the beets on a coarse grater, and the carrots can be grated or cut into thin strips. Cut the onion into quarter rings, then into strips. Blend the tomatoes or pass them through a meat grinder until smooth.
Heat half of the vegetable oil in a saucepan and add the carrots and onions. Sauté the vegetables until they turn a beautiful golden color to release their aroma.
While the onions and carrots are sautéing, prepare the herbs. Remove the stems and finely chop the parsley, dill, and cilantro. Although herbs are available year-round, summer herbs fresh from the garden will add a special charm to your preparation.
Add the beets, chopped tomatoes, chopped herbs, sugar, and citric acid to a saucepan. Pour in the remaining vegetable oil so that all ingredients are well soaked.
Simmer the vegetables together for 40 minutes, until the beetroot is tender. Shortly before the end of cooking, add a bay leaf for extra flavor.
Pour in the vinegar and bring the mixture to a boil once more to ensure its preservation.
Distribute the hot borscht preparation into sterilized jars and seal them tightly with lids. Wrap the jars and leave them until completely cooled. Store the finished preparation in a dark, cool place to enjoy the taste of summer in winter.
