Start by preparing the asparagus: if it's young and thin, leave it as is. If the stalks are mature and thick, carefully snap off about 2-2.5 cm from the tough, lower part of each stalk.
Take a vegetable peeler and carefully peel the stalks of mature asparagus, removing the tough outer skin.
For mature asparagus: immerse it in boiling water for 1-2 minutes, then quickly transfer it to ice water to stop the cooking process, and dry thoroughly. Young asparagus only needs to be blanched with boiling water in a colander and patted dry.
Prepare tall, sterilized jars that can accommodate the asparagus spears vertically, ensuring the marinade will completely cover them. Carefully arrange the asparagus in the jars.
Seal the jars tightly with lids and refrigerate them for at least 6 hours, allowing the asparagus to marinate thoroughly and absorb the flavors.
Prepare the marinade: heat the vinegar over medium heat. It should be warm, but do not bring it to a boil.
Add salt and sugar to the warm vinegar, stirring thoroughly until completely dissolved.
Peel and thinly slice the garlic, then add it to the vinegar mixture. Pour in the vegetable oil, add the dill seeds and pepper. For a richer flavor, you can add a few spoonfuls of Dijon mustard.
Thoroughly mix the marinade and pour it over the asparagus in the jars. Top up with warm water until the asparagus is completely submerged.
