Start by preparing: thoroughly wash the lemon and prepare a baking sheet.
Mash the cottage cheese with a fork until smooth. Add the egg and 1.5 tablespoons of sugar. Mix all ingredients thoroughly to obtain a smooth consistency.
Slice the lemon into thin rounds and sprinkle with 1.5 tablespoons of sugar. Let sit for 30 minutes to allow the lemon to release its juices. Then, drain the extracted juice, reserving 1 tablespoon for the sour cream sauce. Gently blot the lemon slices with a paper towel to remove any excess moisture.
Dice the lemon into small cubes and add them to the cottage cheese dough. Mix well to ensure the lemon is evenly distributed.
Shape the curd mixture into neat cheesecakes and dredge them in flour. Heat a frying pan with butter. Once the butter has melted, place the cheesecakes in the pan and fry them until golden brown on both sides.
Transfer the fried cheesecakes to a baking dish. Place them in an oven preheated to 170°C for 20 minutes to finish cooking.
Arrange a serving of fragrant syrniki on a plate. Sprinkle them with fresh lemon zest, garnish with a mint sprig, and serve with the prepared sour cream sauce. Enjoy this exquisite breakfast or dessert!
