Begin by preparing: sift the flour, chill the water in the refrigerator or freezer for 15 minutes until icy, and prepare your baking pan.
Cut the butter into small pieces and add it to a bowl with the sifted flour.
Thoroughly rub the butter into the flour until fine crumbs are formed.
Remove the baked crust from the oven. Spread the cottage cheese filling evenly over it. Carefully press the apple slices into the cottage cheese until they are almost completely submerged. Return the pan to the oven at the same temperature and bake for another 40 minutes. Then, take out the pie, brush it with apricot jam, and sprinkle with almond flakes. Bake for another 10 minutes until golden brown.
Cut the prepared cheesecake into portions. To add freshness and aroma, garnish each piece with mint leaves and a small amount of fresh berries.
Pour the chilled water into the flour mixture and add salt. Knead the dough until smooth, then shape it into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
Grease a baking dish with butter. Roll out the chilled dough on a floured surface into a thin layer. Carefully place it into the dish, pressing firmly with your hands against the bottom and sides. Bake in a preheated oven at 180 °C for 15 minutes.
While the base is baking, prepare the filling. Cut the apples in half, remove the cores, and slice the fruit into thin pieces about 0.5 cm thick.
Whisk the eggs with vanilla sugar until a light foam forms. Add the egg mixture to the cottage cheese and mix thoroughly. If the dough base is not yet ready, refrigerate the cottage cheese filling.
