Start by preparing the pumpkin: carefully cut off the top third, which will serve as a lid. Then, using a sharp spoon, thoroughly clean out the inside of the pumpkin, removing all fibers and seeds, to create the perfect space for the filling.
Prepare the filling: finely dice the lamb and tail fat. Cut the onion into short strips so that it distributes evenly throughout the mince.
In a large bowl, combine the chopped meat, onions, and fat. Mix thoroughly, then add salt, pepper, and the aromatic spice blend. Stir well once more to ensure all ingredients are evenly distributed, then fill the prepared pumpkin with this delicious stuffing.
Place the stuffed pumpkin in a cold oven. Set the temperature to 200°C. Cooking time ranges from 1.5 to 2.5 hours, depending on the size of the pumpkin, until it becomes incredibly tender and fragrant.
Serve this magnificent dish whole on a large platter. Carefully spoon the stuffing from the pumpkin onto individual plates. Then, cut the pumpkin into four sections, use a knife to remove the tender pumpkin flesh, cut it into small pieces, and serve it as a side dish with the meat. Enjoy this culinary masterpiece!
