Start by thoroughly preparing the potatoes: wash them using a brush, then peel and grate them coarsely. Place the grated potatoes in a sieve and squeeze them well with your hands to remove excess moisture. Transfer the potato mixture to a bowl.
To keep potatoes from darkening, sprinkle them with lemon juice and toss. Add a pre-washed egg, sour cream, and salt to the bowl. Mix all ingredients thoroughly, then add the flour and mix well again until smooth.
Heat a skillet with vegetable oil. Carefully spoon the potato mixture onto the skillet, forming latkes. Fry them over medium heat for 3-4 minutes on each side until they develop an appetizing golden crust.
While the potato pancakes are cooking, prepare the sour cream sauce. Rinse and dry the dill, then finely chop it. Mix the dill with the sour cream, add the garlic pressed through a garlic press, and salt to taste. Serve this aromatic sauce with hot, freshly made potato pancakes.
