Begin your culinary journey by preparing the vegetables: slice the zucchini and mushrooms into elegant 7mm thick pieces. Remove the seeds and membranes from the bell pepper, then divide it into neat wedges. Peel the onion and cut it into 7-8mm thick rings. Arrange all these vibrant vegetables on a baking sheet, season generously with salt and pepper, and drizzle with fragrant olive oil.
Heat a grill pan to the perfect temperature and cook the vegetables for 2-3 minutes per side to maintain their appealing crisp texture. Transfer the cooked vegetables to a cutting board, let them rest for 5 minutes, then cut them into large, easy-to-eat pieces.
Now it's time to assemble the flatbreads: generously spread each flatbread with fragrant pesto sauce. On one half of the flatbread, place a little tender mozzarella, then add a layer of juicy vegetables, cover again with mozzarella, and carefully fold over the other half of the flatbread.
Place the assembled tortillas onto a preheated pan, lightly greased with olive oil, and cook for 3 minutes on each side. Continue cooking until the cheese melts into a gooey, golden mass. Cut the tortillas into 3–4 appetizing pieces and serve immediately, savoring every bite!
