Prepare two bowls, an airtight container, and a baking sheet. Line the baking sheet with parchment paper. Preheat the oven to 120°C.
Roughly chop the almonds, then transfer them to one of the bowls. Add the rolled oats, shredded coconut, and sugar to the almonds. Mix all ingredients thoroughly.
In a second bowl, pour the maple syrup and add the coconut oil. Carefully scrape the seeds from the vanilla pod and add them to the bowl with the syrup and oil. Mix the contents of the bowl thoroughly until smooth.
Add the dry ingredients to the wet ones, and mix thoroughly until smooth. Then, spread the resulting mixture evenly in a thin layer on a baking sheet lined with parchment paper.
Place the baking sheet with granola into the preheated oven for 20 minutes. After this time, remove the tray, gently stir the granola, and return it to the oven for another 20 minutes.
Stir the granola one last time and let it bake for another 15-20 minutes until golden brown and crispy.
Remove the finished granola from the oven and allow it to cool completely to room temperature. Add the dried cherries and mix thoroughly. Transfer the granola to an airtight container and refrigerate for storage.
Serve the homemade granola with creamy Greek yogurt and fresh strawberries. To complete the dish, garnish it with a sprig of mint, adding a fresh aroma and elegant appearance.
