The Spanish dessert "Fried Milk" is a delicate treat that literally melts in your mouth, reminiscent of an exquisite custard. This dessert is not widely known around the world, but it absolutely should be! The main rule when preparing it is to maintain a square or rectangular shape so that when served, it can be beautifully sprinkled with sugar, powdered sugar, or cinnamon, creating a perfect indulgence.

Sugar - 100 g
Premium grade wheat flour - 4 tbsp.
Corn starch - 3 tbsp.
Egg - 1 pcs.
Refined sunflower oil - 3 tbsp.
Chicken egg yolk - 1 pcs.
Butter 82.5% - 1 tsp.
Ground cinnamon powder - ½ tsp.
Powdered sugar - to taste
Berry - to taste

Thoroughly wash the egg. Sift the wheat flour through a fine sieve to ensure the dessert is exceptionally fluffy and tender.
Measure 350 ml of milk and pour it into a separate saucepan.
Add cinnamon to the milk and stir thoroughly to distribute the aroma evenly.
Place the pot over medium heat. Bring the milk to a boil, then reduce the heat and simmer for another minute to allow the cinnamon to fully release its aroma.
Add cornstarch to the remaining milk.
Pour the egg yolk into the milk and starch mixture and stir thoroughly until smooth.
Carefully pour the resulting mixture in a thin stream into the boiling milk, stirring constantly. Add sugar and bring to a boil, then cook for another couple of minutes until the sugar is completely dissolved.
Grease the mold with butter so that the dessert can be easily removed.
Pour the milk mixture into the prepared mold. First, let it cool at room temperature, then refrigerate for 2-3 hours until completely set.
Remove the chilled mixture from the refrigerator and cut it into small, uniform cubes.
Break the egg into a bowl and whisk it until fluffy with a mixer, blender, or whisk.
Coat each cube of milk mass in flour to create a crispy crust.
Dip the flour-coated cubes into the beaten egg, ensuring even coverage.
Dredge the cubes in flour again to set the coating.
Heat the sunflower oil in a pan. Add the milk cubes and fry them on all sides over medium heat until golden brown. Then, transfer the dessert to paper towels to remove excess fat.
Sprinkle the "Fried Milk" with powdered sugar, garnish with fresh berries and fragrant mint, then serve with tea, enjoying this delightful dessert.
