Start by preparing: thoroughly wash and dry the dates and nuts. Make sure your immersion blender is ready to use.
To make the dates tender, pour hot water over them and let them sit for 15 minutes.
Remove the pits from the dates, then blend them with an immersion blender until a smooth puree is formed.
Grind the nuts in a blender until fine crumbs are formed.
Combine the date puree, shredded coconut, ground nuts, and vanilla extract. Mix thoroughly until a uniform consistency is achieved.
Form neat, small balls from the resulting mixture.
Roll each ball in coconut flakes or cocoa powder. Arrange them on a plate and refrigerate for 30 minutes to set.
