Preheat the oven to 200°C. Peel the potatoes and slice them into thin rounds, 5–6 mm thick. Thoroughly wash the lemon with a brush, pat it dry, zest it using a fine grater, and squeeze out the juice.
In a separate bowl, combine 2 tablespoons of lemon juice, olive oil, cumin, and a pinch of cayenne pepper. Drizzle this fragrant mixture over the sliced potatoes and gently toss with your hands to ensure each slice is evenly coated with the spiced oil.
Line two baking sheets with parchment paper and arrange the potatoes in a single layer, ensuring the slices do not overlap. Place the baking sheets in the preheated oven and bake for 10 minutes.
After 10 minutes, carefully flip the potato slices and return the baking sheets to the oven for another 10 minutes, until the chips are golden and crispy. Drizzle the finished chips with the remaining lemon juice, sprinkle with fresh lemon zest and salt. Let them cool on a wire rack before serving to make them even crispier.
