Delicious and original rolls can be made from simple lavash. This recipe offers two filling options: mushroom and cottage cheese. However, any products can be used to fill the rolls. The main thing is that they combine well with each other. It is better to use fresh lavash, then it will not crack and crumble. Any cheese, both hard and soft, is suitable for the filling.

Rinse the greens with water and pat dry with paper towels. Wash the mushrooms, cut off any dark spots and the blackened base of the stem, then pat dry. Rinse the onion and peel off the skin.
Grate the cheese on a medium grater and place it in a bowl.
Finely chop the dill and add it to the cheese.
Add the cottage cheese to the remaining ingredients.
Add sour cream.
Season to taste and thoroughly mix the filling until smooth.
Spread the prepared filling onto one lavash. Carefully roll it up. Place the roll on a baking sheet lined with parchment paper or a Teflon baking mat. Bake in a preheated oven at 180℃ for 7-10 minutes, then remove and let cool.
Slice the mushrooms into small pieces for the second filling.
Finely dice the onion.
Pour the vegetable oil into the pan and place it on the stove.
Place the onion in the pan and sauté until translucent.
Add the mushrooms to the onions and sauté until all the liquid has evaporated. Stir constantly to prevent the ingredients from burning and to preserve their flavor.
Season with salt and pepper to taste. Remove the pan from the heat.
Finely chop the parsley and add it to the onions and mushrooms.
Grate the cheese on a medium grater.
Place the fried mushrooms with onions, cheese, and parsley in a clean bowl. Add the processed cheese and mayonnaise. Mix everything thoroughly.
Spread the filling on the second lavash. Roll it into a tight cylinder, bake it in the oven, fry it in a pan, or slice it immediately after preparation.
Cut the lavash rolls into individual pieces. Arrange lettuce leaves on a serving plate. Place the rolls on top and serve.
