Prepare all ingredients: thoroughly wash the meat and vegetables, and peel the carrots.
Cut the chicken into small, bite-sized pieces and pan-fry them until golden brown. Then, transfer the fragrant meat to a saucepan.
Slice the white part of the green onion into neat rings, the eggplant and zucchini into large cubes, the carrots into thick rounds, and the tomatoes into arbitrary large wedges. Sauté these vibrant vegetables in the same pan where the chicken was cooked for 10 minutes. Meanwhile, preheat the oven to 200°C.
Transfer the sautéed vegetables to the saucepan with the meat. Add salt, pepper, and your favorite spices – these could be Italian herbs, dried garlic, or an all-purpose seasoning. Stir the stew thoroughly so that every piece is infused with the flavors. Cover the saucepan with a lid and place it in a preheated oven for thirty minutes.
