It's based on ripe tomatoes, fresh or as a paste, which, combined with chili peppers and other readily available ingredients, create a thick, sweet and sour masterpiece. Prepare the ingredients: thoroughly wash the chili peppers and tomatoes, peel the onion and garlic. Preheat the oven to 180 degrees so it's ready for baking.
Make a cross-shaped incision at the top of each tomato. Then, immerse them in boiling water for 10 seconds, immediately transferring them to ice water to easily remove the skin. Halve the peeled tomatoes.
Slice the onion into thin strips so it cooks evenly and releases its aroma.
Slice the garlic cloves thinly so that their flavor harmonizes with the overall bouquet of the sauce.
Halve the chili pepper, carefully remove the seeds to adjust the spiciness, and chop it into small pieces.
Take a deep bowl and place the prepared tomatoes, onions, garlic, and chili peppers into it.
Pour fragrant vegetable oil and balsamic vinegar into a bowl; these will add depth of flavor to the sauce.
Season the vegetables with salt and sugar to taste, then mix thoroughly so that each piece is infused with the flavors.
Line a baking sheet with parchment paper, spread the vegetable mixture on it, and bake in an oven preheated to 180 degrees Celsius for thirty minutes. After baking, allow the vegetables to cool to room temperature.
Transfer the cooled vegetables to a blender or food processor. Blend them until smooth, but be careful: the vegetables should not turn into a puree; maintain a slightly textured consistency.
Return the chopped vegetables to the bowl and add the tomato paste. Mix thoroughly until smooth. If necessary, add a little more salt to perfect the taste. Transfer the finished sauce to a gravy boat or jar.
