About this recipe

This sweet and sour, moderately spicy pepper sauce, thanks to pectin, transforms into a thick and almost transparent jelly as it cools in the jar. To achieve a vibrant and beautiful color, use bell peppers of various shades. You can adjust the sauce's spiciness by reducing the amount of jalapeño or omitting it entirely, or conversely, by adding chili or another hot pepper. The sauce cooks for only 1 minute after boiling, keeping the small pieces of pepper slightly crunchy.

Prepare all ingredients: thoroughly wash the jalapeño peppers, remove the stems, cut them in half, and deseed them. Wash the bell peppers as well and remove their cores and seeds. Prepare a blender with a bowl, a suitable-sized heavy-bottomed saucepan, and a 0.3 L glass jar with a screw-on lid. Sterilize the jar and lid using boiling water or an oven at 150℃ for 15 minutes.

Place the jalapeños in a blender and process until pureed with small chunks. Transfer the mixture to a saucepan.

Dice the bell pepper into small pieces and blend it in a blender until it forms a puree with fine particles. Add this mixture to the jalapeños in the saucepan.

Add sugar and vinegar to the pepper mixture, then mix thoroughly. Place the pot over medium-high heat and, stirring constantly, heat the mixture until it boils and the sugar is completely dissolved.

Add pectin to the boiling sauce and cook, stirring constantly, for 1 minute. Pour the hot sauce into a prepared jar, let it cool to room temperature, stirring occasionally 2-3 times to evenly distribute the pepper pieces. Then tightly close the jar with a lid and refrigerate for storage.
