Boil 2 eggs until hard, for about 8 minutes after the water starts boiling. Cool them under cold water, then gently crack the shells with a spoon. After 2 minutes, peel the eggs and cut each into four equal pieces.
Blanch 180g of small, peeled, cooked shrimp with boiling water, then drain them thoroughly. Lightly salt and pepper them to enhance their delicate flavor.
Toast 2 slices of bread, about 1.5 cm thick, until golden brown. Lightly spread mayonnaise on each toast, then top with a fresh, crisp lettuce leaf. Evenly distribute the shrimp over the lettuce, then add a little more mayonnaise. Neatly arrange the egg quarters alongside. Garnish the finished toast with fresh dill and caviar, then serve immediately.
Finely chop 4–5 sprigs of fresh dill. Combine it with 4 tablespoons of mayonnaise, 1 tablespoon of thick plain yogurt, and 1 teaspoon of whole grain mustard.
