Start by preparing fresh tomatoes: make cross-shaped incisions, then immerse them in boiling water, and afterward – in cold water. This will help to easily remove the skin.
Carefully peel the skin from the tomatoes with a sharp knife and remove the stems. Dice the flesh into small cubes and transfer to the multicooker bowl.
Peel and finely chop the garlic. Cut the sun-dried tomatoes into thin strips. Add the garlic and sun-dried tomatoes to the fresh tomatoes in the slow cooker.
Take a small piece of cheesecloth, fold it in half, and place a clove and bay leaf inside. Tie the cheesecloth with a strong thread to form a sachet. Submerge the spice sachet into the tomato mixture, leaving the loose end of the thread hanging over the edge of the bowl for easy removal.
Add all remaining ingredients for the homemade ketchup to the slow cooker bowl and mix thoroughly with a spatula. Set the temperature to 90 °C and the cooking time to 2 hours.
Once the program is complete, remove the spice sachet. Blend the contents of the bowl until smooth, then strain the mixture through a sieve to achieve a perfectly smooth texture. Return the ketchup to the multicooker, set the temperature to 110 °C, and cook for 25 minutes with the lid open to allow it to thicken. Pour the finished homemade ketchup into sterilized bottles, which can be sterilized directly in the multicooker.
