Begin by preparing the chicken: generously coat it with butter, then rub it with salt and pepper to infuse it with a unique flavor. Place the chicken on a baking sheet, adding a garlic clove and a sprig of rosemary alongside for aroma. Roast in a preheated oven at 180–200°C for 20–25 minutes until golden brown.
While the chicken roasts, prepare the vegetable sauté. Finely dice the carrots, red onion, celery, and leek. Sauté them in olive oil until tender, then pour in white wine and cook until it has almost completely evaporated, infusing the vegetables with an exquisite aroma.
To make unique zucchini spaghetti, slice the zucchini into long, thin strips. Briefly blanch them in boiling water until tender yet still firm, then season to your preference.
Finally, assemble your culinary masterpiece. Arrange the aromatic vegetable sauté on a plate, then carefully place the roasted chicken on top. Next to it, create a fluffy "mound" of zucchini spaghetti. Drizzle the dish with olive oil and serve, savoring every bite of this magnificent combination of flavors.
