Prepare this fragrant orange and kumquat jam, which will bring you a sunny mood even on the gloomiest day. The combination of citrus notes and delicate sweetness makes it a perfect accompaniment to tea or toast.

Wash the oranges and kumquats thoroughly, then pat them dry with a towel. Slice the fruit into rounds about 0.5 cm thick, leaving the peel on. Divide the orange slices into quarters and remove all seeds. Place the sliced oranges and kumquats in a bowl, pour in 1 liter of water, cover with a small plate, and leave under a weight for 10–12 hours to allow the fruit to soak well.
The next day, transfer the oranges and kumquats, along with any accumulated juice, into a saucepan. Bring to a boil over high heat, then reduce the heat. Add the sugar, lemon juice, and star-cut carambola. Simmer uncovered over low heat for 1.5 hours. Afterward, increase the heat and continue cooking for another 30–40 minutes, until the peel is very tender and the jam has thickened.
Carefully transfer the hot jam into a pre-sterilized jar. Seal the jar and allow it to cool. This fragrant jam will make a wonderful treat or gift.
