Mix all ingredients thoroughly until a homogeneous mass is obtained. Leave the cottage cheese mixture for 30 minutes to allow the semolina to swell and give the syrniki tenderness.

Carefully sort through the currants, remove the stems, rinse them with cold water, and transfer them to a saucepan. Add granulated sugar and 150g of water. Bring the mixture to a boil and simmer for about 3 minutes to allow the berries to release their flavor.

In a separate container, dissolve the starch in 50 ml of cold water, stirring thoroughly until smooth. Then, while continuously stirring the berry broth, slowly pour in the starch mixture in a thin stream. Almost immediately, after 5-10 seconds, remove the sauce from the heat and allow it to cool so that it thickens and achieves the perfect consistency.
