Wash the fruit thoroughly. Peel the banana and carefully remove the leaves from the strawberries. Sift the flour to make it airy. Wash the eggs. Prepare a blender, cling film, a baking dish, and a cake pan.
Crack the eggs into a blender and add 1 cup of sugar. Blend this mixture until a fluffy foam forms.
Gradually add the flour in small portions, stirring continuously to prevent lumps from forming.
Quench the baking soda with vinegar and carefully pour it into the dough. Thoroughly mix all ingredients until smooth.
Preheat the oven to 200 degrees Celsius. Grease a baking dish with oil. Pour the batter into it and bake for 30 minutes, without opening the oven door, to ensure the sponge cake remains airy. After baking, let it cool on a wire rack.
Cut the bananas into small cubes. Slice the strawberries in half or quarters, depending on their size.
In a separate bowl, whisk the sour cream with the remaining sugar until fluffy.
Dissolve the gelatin in half a glass of warm, but not hot, water. Pour it into the sour cream mixture and stir thoroughly.
Cut the cooled sponge cake into small cubes. Mix them with the chopped fruit.
Line a cake pan with plastic wrap. Spoon the biscuit and fruit mixture into it and pour the sour cream frosting over it. Place the cake in the refrigerator for several hours or overnight to set.
Carefully invert the mold onto a wide plate to remove the cake. Garnish it with fresh berries and delicate mint leaves to give it a finished and appetizing look.
