Gooseberries are true champions in pectin content, meaning your jam will turn out incredibly thick without a single gelling agent! It might seem a bit runny when hot, but don't worry: as it cools, it will transform into a luxurious jelly. To add a refined taste and aroma, we've included a little lemon juice and zest, but you can experiment with lime, orange, or other citrus fruits. From this quantity of ingredients, you'll get one 300 ml jar of jam, perfect for cozy winter evenings.

Thoroughly wash the gooseberries and lemon. Carefully remove the stems from the berries. Dry the gooseberries on paper towels. Prepare a jar by sterilizing it using any convenient method: over steam, in the oven, or in the microwave. Boil the lid. Get an immersion blender ready.
Blend the gooseberries until a smooth puree is formed.
Carefully peel the zest from the lemon, being careful to avoid the white pith, then squeeze the juice from the citrus pulp.
Transfer the gooseberry puree into a small saucepan. Add the sugar, lemon juice, and zest. Stir thoroughly and let it sit for 30 minutes to allow the sugar to dissolve and the flavors to meld.
Bring the jam to a boil over medium heat. Then reduce the heat and simmer for 1 hour, stirring frequently to prevent burning and ensure even thickening.
Transfer the finished jam into a sterilized jar and seal it tightly with a lid. Once completely cooled, store it in the refrigerator or a cool cellar.
