Prepare all ingredients: thoroughly wash the eggplants, herbs, and garlic. Peel the garlic so it's ready for further use.
Pour water into a pot and place it over medium heat. Wait for the water to boil, then add salt and sugar to create the base for the marinade.
Carefully pour the vinegar into the boiling water with salt and sugar. This will give the marinade the necessary acidity and aroma.
Cut the eggplants into medium-sized, irregular pieces. It's important not to make them too small, so they retain their texture and don't turn into a puree during cooking.
Carefully lower the sliced eggplants into the boiling marinade. Wait for it to boil again and cook for 5 minutes, stirring occasionally to ensure the eggplants are evenly coated.
Remove the pot from the heat. Carefully drain the marinade and let the eggplants cool. They must be completely cool before the next step.
While the eggplants are cooling, prepare the herbs and garlic. Finely chop the herbs and grate the garlic on a fine grater or press it through a garlic press to create an aromatic paste.
Add the chopped herbs and garlic to the cooled eggplants. These ingredients will give the dish freshness and a piquant flavor.
