Take the butter out of the refrigerator in advance so it can soften and become pliable. Sift the flour thoroughly to aerate it. Prepare your baking pan and mixer to have everything within reach.
Carefully separate the yolk from the egg white. Whisk the yolk with sugar until a light and fluffy mixture is formed.
To the yolk mixture, add the softened butter, fragrant honey, and warm milk. Beat all ingredients with a mixer until perfectly smooth, ensuring no lumps remain.
Add nutmeg, cinnamon, and ginger to the mixture, which will give the pie a magical aroma. Mix thoroughly to ensure the spices are evenly distributed.
In a separate bowl, combine the sifted flour with baking powder to ensure a light and airy dough.
Combine the flour mixture with the liquid ingredients. Knead the dough thoroughly until it becomes soft, elastic, and pleasant to the touch.
Divide the dough into two equal portions. Roll out each portion into a sheet approximately 0.5 cm thick.
Lay one sheet of dough into the prepared pan and generously spread your favorite jam over it.
Cover the jam with the second layer of dough, carefully pinch the edges to prevent the filling from leaking out. Preheat the oven to 180°C and bake the pie for 30-40 minutes until golden brown.
Dust the finished honey cake with jam with powdered sugar to give it an elegant look, and serve it, savoring every bite.
