Begin by preparing all the ingredients: thoroughly rinse the meat and pat it dry with paper towels. Next, wash and peel the carrots, onions, and garlic. Gently clean the mushrooms of any dirt using a damp sponge.
Cut the pork into small pieces of any shape you like: they can be strips, cubes, or julienne.
Heat the vegetable oil in a skillet over medium heat. Add the sliced meat and sauté until a delicious golden crust forms, stirring occasionally.
While the meat is browning, finely dice the onion. Shred the carrots into julienne strips or grate them on a coarse grater. Press the garlic through a garlic press or grate it on the finest grater. Slice the mushrooms thinly or cut them into cubes.
Add all the chopped vegetables to the browned meat in the pan. Stir thoroughly and continue to sauté over medium heat for about 7 more minutes, uncovered.
Now, add the mushrooms to the pan with the meat and vegetables. Sauté uncovered for another 10 minutes, stirring occasionally to ensure even cooking.
It's time to season: salt and pepper the contents of the pan to your liking. Add the paprika and mix well to ensure the spices are evenly distributed.
Add the tomato paste to the meat and vegetables and stir thoroughly again to combine all ingredients.
Pour 0.5 cup of water into the pan, cover it, and set the heat to the lowest setting. Simmer the vegetables and meat for about 40 minutes, allowing all the flavors to meld harmoniously and the meat to become incredibly tender.
Serve the fragrant pork and vegetable stew hot, garnished with fresh herbs. This dish is self-sufficient and doesn't require a side dish, but you can complement it with pickles or pickled vegetables for a fuller flavor.
