Zucchini caviar with mayonnaise is a delicious, delicate, and aromatic preserve that will be a real find for the winter table. Unlike the classic version, the addition of mayonnaise makes the caviar especially thick and velvety, giving it a pleasant richness and a slightly sour note, which makes the taste more harmonious and "homemade." This caviar stores perfectly all winter; mayonnaise acts not only as a flavor accent but also as an additional preservative, helping to maintain the freshness and richness of the dish. Its taste is mild, creamy, with a slight piquancy and a rich vegetable aroma. This is an ideal option to enjoy the taste of summer in winter. You just need to open a jar and serve the caviar with meat, potatoes, or with a slice of fresh, crispy bread.

Carrot - 750 g
Onion - 850 g
tomato paste - 250 g
Mayonnaise Provencal - 200 g
Refined sunflower oil - 175 ml
Sugar - 100 g
Medium salt - 1 tbsp.
Table vinegar (9%) - 80 ml
Ground black pepper - ½ tsp.
Smoked ground paprika - ½ tsp.

Wash the zucchini, trim the ends, and cut the vegetables into medium-sized cubes. If you are using large, mature zucchini for the recipe, peel them first and remove the core with seeds.

Peel the onion, then dice it into medium-sized cubes.

Wash the carrots, peel them, and grate them on a coarse grater.

Combine the prepared vegetables—zucchini, onions, and carrots—in a deep saucepan.

Mix the ingredients. Add 9% table vinegar.

Pour refined sunflower oil into the vegetable mixture.

Add sugar and coarse kitchen salt.

For a touch of heat, add ground black pepper, and for aroma, smoked paprika. If desired, you can also use other spices, such as coriander or dried garlic. Mix the ingredients thoroughly.

Cover the pot with a lid and simmer the zucchini caviar over low heat for 1 hour. During this time, the vegetables will release their juices, reduce in volume, and become tender.

Using an immersion blender, mash the zucchini caviar into a thick, smooth puree. If desired, this step can be skipped, and the caviar can be left in chunks; it will be no less delicious.

Add quality mayonnaise and tomato paste from a trusted manufacturer to the zucchini caviar. Thoroughly mix the ingredients until smooth.

Return the pot to low heat, ensuring it is covered with a lid. Continue to simmer the zucchini caviar for 1 hour. While the preserve is cooking, sterilize the glass jars and their metal lids.

Spoon the zucchini caviar into the prepared jars. Cover the preserves with metal lids and screw them on tightly.

Wrap the jars of caviar in a warm blanket and leave them for 1-2 days until they cool completely.

Store the finished zucchini caviar with mayonnaise in a dark, cool place.

This amount of ingredients yields 2.5 liters of preserves. Enjoy your meal!
