Quiche is a traditional French pie or even a tart. My recipe is an adapted, authorial version of quiche. It is healthier and lower in calories due to thin dough and a large amount of filling. It is suitable for any meal throughout the day: from breakfast to a late snack; for any table: from everyday to festive. It is extremely easy to prepare. The quiche made with red cabbage turns out to have an absolutely cosmic color, with shades of blue, purple, and even turquoise. It looks absolutely stunning! In short, I ❤️ quiche! Lifehack: you can pre-cook the cabbage with onions, then at any moment, you can "assemble" all the ingredients together and put it in a preheated oven. This will take you only 10 minutes, and then you can go about your business while the quiche bakes. Another tip: any filling you like generally works. You can use pre-cooked or baked vegetables, add meat, sausages, or cheese. Quiche offers a huge variety of options and flavor combinations. The key is to understand the principle.

Cabbage should be washed, cut in half and rinsed inside. Even better - soak in water in cut form for 15-20 minutes to remove pesticides, if such are used in its cultivation. Clean the onion.
Slice the onion and cabbage thinly.
Add vegetable oil to a preheated pan or deep frying pan, I have olive oil.
Put the onion on the bottom and fry over moderately high heat for 2-4 minutes, stirring occasionally. To boil water.
Add chopped cabbage, pour in some boiled water. Bring everything to a boil, then lower the heat. Simmer, adding water as needed. It usually takes me 50 minutes. At this step, we need to stew the cabbage until fully cooked and at the same time evaporate all the excess water so that the future filling is not raw. It is important!
Preheat the oven to 200 degrees Celsius.
We take the base for the quiche, I have a frozen raw tortilla from the store. In general, you can look at the original recipes and make the base yourself or use any unleavened thin dough. The thickness of my dough is about 1-1.5mm. You can even try puff pastry, it will be tasty, but not so useful. We defrost our base, it takes me 3-5 minutes. At this time, we are preparing the filling.
Mix two raw chicken eggs until smooth. Add milk, mix again. Add quite a bit of salt and spices to taste. Salt should be added a little less than in an omelette, as the cheese will add salinity. Consider this.
Put the dough into a baking dish. I additionally use baking paper, it will be more reliable and nothing will burn. We form a cup.
We spread our filling and cheese in the base. I recommend putting the cheese either in the first layer, cabbage on top, or in the middle between two layers of cabbage. It will taste better and the cheese will not turn brown.
Fill it all with a filling of eggs and milk.
We put in the oven and at the same time reduce the temperature to 180 degrees. So it is necessary!
Bake exactly 45 minutes. And it's done!
