We wash and clean the pumpkin, cut it into cubes or strips as you prefer. Heat oil in a frying pan, in my case mustard oil (or you can use olive oil or as you prefer), then fry the pumpkin over medium heat until half-cooked, about 12 minutes.

Chop the leek and celery and add to the pan. Salt. Cover the lid for 5-7 minutes
When the celery becomes soft, add the lentils.
Sich 50 -70 grams
Add 150 grams of water and cover with a lid on a quiet fire for 10 minutes.
At the end, I add fresh basil, or you can garlic or pepper, at your discretion. And simmer under the lid for a couple more minutes.
I also sprinkle the finished dish with any cheese sometimes.
