A traditional dish of Mari cuisine and Vyatka. Unlike dumplings, it is made with rye flour. They are not molded, but woven. Since the dough does not develop gluten, you need to practice making them. Mine are made entirely with rye flour.

Prepare products. Wash the eggs, rub the cottage cheese through a sieve. Peel the zest from one lemon.
Mix cottage cheese with eggs, add sweetener, I used 4 Milford tablets, lemon zest, vanillin. Mix.
Mix flour, sour cream, 4 quail eggs and knead the dough. It is good to do this in a plastic container. Knead the dough for smoothness so that it lags behind the walls of the dish. Leave it to "rest" under the bowl for 30 minutes.
Roll out the dough. Cut out circles. Further, the process resembles the modeling of dumplings. Put the filling in the center and make a crescent moon from one corner to the other.
Boil in boiling water for 7 minutes, pricked up a unique product, since the dough does not separate from the filling, even if there are errors in their manufacture in the form of holes. Serve hot immediately. Bon appetit.
