Combine almond milk, rice, sugar, and salt in a multipurpose pressure cooker (such as an Instant Pot). Close and secure the lid. Select high pressure according to the manufacturer's instructions; set the timer for 18 minutes. Allow 10-15 minutes for the pressure to build up.
Release the pressure using the natural release method according to the manufacturer's instructions, approximately 10 minutes. Unlock and remove the cover. Add the vanilla extract. Serve warm or chilled. The rice pudding will thicken as it cools.
