Combine the chocolate, instant coffee, and salt in a medium bowl.
Heat the cream, sugar and vanilla in a saucepan over medium heat, stirring constantly, until it starts to boil.
Pour hot cream mixture over chocolate mixture; let stand 1 minute.
Beat the chocolate-cream mixture for 1-2 minutes until combined.
Pour mixture into four small espresso cups. Tap to remove air bubbles. Chill thoroughly in the refrigerator for at least 4 hours.
Serve with a sprinkle of grated chocolate, or top with lightly whipped cream and a dusting of cocoa powder.
