Preheat oven to 450 degrees F (230 degrees C). Lightly butter 1 to 2 baking sheets.
Whisk the flour, sugar, thyme, pepper and salt together in a large bowl. Add the wings and toss until evenly coated.
Arrange the chicken wings in a single layer on the prepared baking sheets.
Fry chicken wings until golden brown and centers are no longer pink, 15 to 20 minutes, turning once every 10 minutes.
