Preheat the oven to 170°C and line a 20-centimeter baking dish with parchment paper.
In a food processor or mixer bowl, beat eggs with sugar until fluffy, which will double in volume, about 3-5 minutes.
Add flour, baking soda and food coloring and mix well until smooth.
Add kefir and oil and beat on low speed. Finally, add the vinegar, cornstarch and baking powder and mix well.
Pour the dough into the prepared form and bake for 40-50 minutes, depending on the power of the oven.
We check readiness with a toothpick and let the cake cool completely in the form.
Cut off the uneven upper part of the cake and grind it for later use.
Cut the cake into three layers and assemble the cake: put the bottom layer on a plate, spread it with cream, then put the second layer and repeat with more cream, then put the third layer and cover the top and sides of the cake with the remaining cream.
Sprinkle the cake with crumbs and put it in the refrigerator for a few hours or overnight. Bon appetit!
Beat cream cheese, heavy cream and powdered sugar until thick and homogeneous.
Add lemon or lime juice and zest and mix well.
