Mix all the mayonnaise ingredients except the lemon juice together in a bowl. Season to taste with lemon juice, salt and pepper.
Heat the grill to maximum. Line a baking sheet with parchment paper and arrange the corned beef in four piles on it, then top with the cheese and grill until it's melted and bubbly.
Brush both sides of all the bread slices with butter. Heat a pan over medium heat and fry the bread slices on both sides until golden. Spread mayonnaise generously on one side of each slice of bread. Place four slices of corned beef and cheese and sauerkraut on top, mayonnaise side up, then place the remaining bread slices, mayonnaise side down. Secure with cocktail sticks, then cut in half to serve.
