Wash the potatoes thoroughly under running water with a brush and cut into medium-thick slices. There is no need to peel the tubers. Transfer to a large bowl.
In a small bowl, combine olive oil, paprika, and garlic. Add salt and hot red pepper to taste.
Place the potatoes in a large bowl and cover with the prepared butter mixture. Stir until it is evenly distributed throughout each slice. Leave for 10 minutes.
Preheat the oven to 200°C. Place the potato wedges in a single layer on a baking sheet lined with baking paper. Place on the middle rack of the oven. Bake for about 30 minutes.
