Break the egg into a bowl, add sugar and salt, beat with a whisk. It is not forbidden to use a mixer, but in this case it is not needed: foam bubbles are formed due to carbonated water.
Continuing to whisk, gradually pour chilled mineral water into the bowl. Then add vegetable oil and mix well again.
Sift the flour into another spacious bowl, set aside a couple of tablespoons of flour - it can be added when kneading the dough. Make a hole in the center of the flour mound, pour the liquid ingredients into it and mix vigorously with a spoon.
Continue kneading the dough with your hands. It should be quite dense, yet soft and elastic. Add flour if required. Roll the dough into a ball, wrap in plastic, and let the dough rest for at least half an hour before rolling out.
